2021 Chardonnay
Tasting notes
This wine is expressive of the Chardonnay varietal with aromatic notes of white peach and green apple. On the palate Iwe are particularly happy with the acidity and layered pear. Spice of lees aging lingers on the finish.
Production notes
The 2020 Chardonnay was fermented and barrel aged in 100% neutral French oak. We stirred the lees in the barrels once every two-week for 6 months. Lees stirring is when a stir stick, often a stainless steel rod, is put into the barrel to stir up the dead yeast cells that have accumulated on the bottom of the barrel after fermentation. Now, that may not conjure up romantic images of winemaking, but it is an ancient technique for creating softness, viscosity and texture to white wines.
